The Mac Shack, a Denver-based food truck, was founded by a savvy operator who saw a clear need for mac and cheese downtown.
Owner Shannon Hardenbrook launched her truck four years ago after seeing customer demand for the kitchen on a grill truck that would offer it intermittently, according to a Westword report.
Hardenbrook’s truck offers a variety of toppings, from lobster to green chillies. The business expanded into a counter service on the Edgewater Public Market last year. The truck now offers the option of take-away in the market as well as delivery via Grubhub.
