The pop-up bar is so prevalent that even the Denver government center is jumping into the hype with a beach-themed setup that serves sangrias and other tropical cocktails all summer.
Bar Civic opened to the public around happy hour on July 14th. The pop-up will serve beer, wine and spirits from the Voorhies Memorial Seal Pond every Tuesday-Thursday at least until September from 4pm to 10pm.
“The overall goal: There are so many beer gardens and breweries everywhere, so we wanted to take that … summery atmosphere into a more upscale bar with cocktails, live music, a DJ and lots of cool lighting,” said Griff Smith of Headline Events, who Bar Civic and Civic Center Eats operate in the same area.
The new Civic Center Bar will coincide with Civic Center Eats each week and will overlap with the food trucks that run from 11 a.m. to 7 p.m. on the same days.
And Smith says drinkers can expect rotating cocktail specials, starting with sangria this week. They’re served in a real downtown oasis, complete with palm trees, tropical plants, and a DJ playing right on the ocean – or Seal Pond.
